VERSION 1


Ingredients:


Pata (4 to 5 slices)

Salt

Pepper

Onion

Garlic

Soy Sauce (1/4 c)

Soda  (325 ml)

Water (1 glass)

Peppercorn (1 tsp)

brown sugar (1-1/2 tsp)

Laurel leaves

Vinegar (4 tbsp)

1/4 c Lechon Sauce (optional)


Instructions:


1. Season pata with salt and pepper.

2. Add oil in a pan. Fry pata.

3. Remove excess oil.

4. Saute onion and garlic.

5. Add Soy Sauce (1/4 c), Soda  (325 ml), Water (1 glass), Peppercorn (1 tsp), brown sugar (1-1/2 tsp), and Laurel leaves.

6. Bring to a boil. Add Vinegar (4 tbsp).

7. Add 1/4 c Lechon Sauce (optional).


VERSION 2


Ingredients:


5 cloves ginger
2 pcs onion
1 -1/2 kg pork pata
5 tbsp soy sauce
1 tsp whole peppercorn
3 pcs bay leaves
water
4 tsp vinegar
4 tbsp brown sugar
banana blossom
2-3 tsp of cornstarch slurry 


Instructions:


1. Sear the pork pata. Set Aside.

2. Saute garlic and onion. Add pata.

3. Add soy sauce.  Mix.

4. Add whole peppercorn and bay leaves.

5. Cover with water.

6. When pata is tender, add vinegar, brown sugar, and banana blossom.

7. Add cornstarch slurry.
